Ask a customer what a cup of coffee costs, and they will name the price on the board. Ask the owner, and you will get a different answer. The beans, it turns out, are the cheapest part — a few pence per cup. The milk costs more. The cup itself, the lid, the little wooden stick: more again. Then come the things nobody sees: rent for the corner where the queue stands, wages for the hands that steam the milk, insurance, electricity, and a machine that cost as much as a small car. Out of every pound, the owner keeps a few pence — and only if the queue never stops. Which is why the barista smiles when you order a second cup.
